Camp food
We went camping last weekend and it was a blast! I’ll post pics at some point, but what I really wanted to share was the recipe for campfire fajitas. They were SO yummy!
Buy a pack of John Soules pre marinated beef fajita meat (or make your own) Cut it up in strips and place in foil with a handful of red, yellow, and green peppers that have been sliced (I used frozen fajita veggie mix.) Add in some onion and a pat of butter. Double wrap in a foil pouch.
Then prewrap some tortillas in foil for quick heating. I bought a couple of bags of heat-n-serve roasted red pepper rice. (.92 each,) and warmed those on the camp-stove.
Throw your packets over the fire, and your tortillas on the side. When you can smell them they are done. Assemble accordingly with sour cream, homemade salsa, and shredded cheese (if you like.) Voila! Quick, easy, and better than hot dogs.
