Here’s a homemade veggie burger recipe I’m gonna try…

1 can Garbanzo beans
2 eggs
1/4 cup quick cook barley
some old fashioned oats (rolled, whatever just not quick cook)
dash of soy sauce
1-2 oz espresso (just make strong coffee)

1. put barley in mug and pour in hot coffee until it covers the barley where you can’t see it. mix in a dash of soy sauce. let sit.

2. put oil/butter in skillet then saute garbanzo beans (about 5 minutes)

3. add barley (when all/most of the liquid is soaked up) keep sauteing for a min. or two, just keep the beans from getting dry.

4. mash beans and barley with fork in bowl, until evenly a mush.

5. add two eggs and mix together.

6. mix in oats until the consistancy is kinda like ground beef, a little softer maybe; it’s two-three handfuls of oats for me.

7. section the whole concoction into fourths, ball up a fourth in your hand like a thick patty.

8. cook in a little oil at med-high heat about 3-4 min, then flip

9. press patty to correct thickness. ( when you put them in the pan in the first place they are thick almost like putting dough in a skillet it just doesn’t flatten by itself like a pancake or something)

10. Enjoy. i like to top with home-made “big-Mac” sauce = mayo, ketchup + annie’s goddess dressing, and then some diced onions. that’s just my fav.
